CHAPTER I THE PROBLEM AND ITS BACKGROUND
Background of the Study Nowadays, many eateries can be found almost everywhere from big franchises to small and simple carenderia which is topic of this research. As food comes in many quantities, varieties, and prices. Carenderias seem to have the short end of the business stick. Having shorter range in both gallant customers and eating space and so we are going to see and find out how these small businesses strive in their competition. Through the years, food and other services are being offered by many different food establishments in Tacurong City. Many people nowadays prefer to depend on the food served at the carinderia. Students, employees, drivers and vendors are those people who are likely to be customers in the carinderias. With the imposed rules implemented, these people will benefit from it by receiving safe and proper nourishments from the food and the owners will be able to implement and practice proper sanitation with regards to food selection, and food preparation. Carinderias have basic standards regarding sanitation practices and health maintenance. The carinderias must be well-cleaned and well-managed to prevent the spread of certain microorganisms which causes disease and contamination of food to maintain safe and proper nourishment from the food.
This study aims to enhance not only the necessary knowledge and skills of carinderia owners and staff, but also to implement and practice proper sanitation in managing their business regarding proper health and sanitary practices as well as the importance of sanitation on food practices, food selection, food preparation, and pricing. It also let customers and carinderia workers bear in mind the real essence of proper health and sanitation in their lifestyle in relation to their work and food intake.
Statement of the Problem This study aims to determine the status of carinderias situated along educational institution of STI College Tacurong as a basis in the research conducted. Specifically, it answers the following questions: 1. How can a local carinderia gain competitive advantage against fast food chains? 2. What is the profile of the carinderia in terms of: a. years of operation b. number of staff c. physical facilities 3. What is the status of the carinderia observed in terms of the following: a. Food Selection b. Food Preparation
Significance of the Study The purpose of this study is to help the local carenderia gain enough profit for them to survive and to gain competitive advantages in the food industry amidst all the fast food chains surrounding the area. This study will help these local cafeterias to have more sustainable profit by providing them knowledge on how to improve their service, quality of food, price, facilities, number of food choices and allocation of resources. Improving on this will help the local cafeterias attract more customers, be more profitable and maximize the utility of the customers. This study also serves to inform recipient on the status of carinderias relevant to the analysis of this study. For the Owner, this study will serve to inform recipient on the status of carinderias relevant to food services. For the Staff, this study aims to enhance not only the necessary knowledge and skills of carinderia staff. For the Researchers, this study will give the researcher reliable information regarding to their analysis for the strategies of local carinderia to gain advantages against fast food chain. For the Future researcher, this study will project a wide picture of the subject that will serve as a reference for a more intensified research for the analysis for the strategies of local carinderia to gain advantages against fast food chain.
Assumption of the Study At the end of the study, the researcher serves to inform recipient on the status of carinderias relevant to food services. The recipient will also reevaluate on how the business will improve, whether it was something they lack or to put more focus on a certain theme they have. It will also make them visualize if their carinderias are still a contender against the bigger and more well-known eateries.
Scope and Limitations of the Study The scope of this study is limited only to the THREEVEE’s carinderia situated along educational institution of STI College Tacurong in the year of 2017. It covers the profile of the carinderia in terms of years of operation, number of staff, physical facilities, and work-related background of: 1) operator, 2) staff and the status of the carinderia. This study is until the end of the semester. It is further delimited to the status of the carinderia in terms of food selection, food preparation, and pricing.
Definition of Terms The following terms are conceptually and operationally defined for the better understanding of the readers.
Carinderia.
In this study, Carinderia is refers as a local eatery selling and
serving and viands with wooden benches. It's also known as a "turo-turo" wherein customers literally point what they want to eat from an array of cauldrons. Fast food chain. In this study, Fast food chain is known as a quick service carenderia within the industry and it is a specific type of restaurant characterized both by its fast food cuisine and by minimal table service. Operation. (Merriam Webster Dictionary) defines operation as performance of a practical work or of something involving the practical application of principles or processes. In this study, It involves the responsibility of ensuring that business operations are efficient in terms of using as few resources as needed and effective in terms of meeting customer requirements. Staff. (Merriam Webster Dictionary) defines staff as officers chiefly responsible for the internal operations of an institution or business. In this study, it is the people employed by a particular organization. Facility. (Merriam Webster Dictionary) defines facility as something that makes an action, operation, or course of conduct easier. In this study, it is a form of asset management concerned with the successful and profitable maintenance, operation, and monitoring of buildings or properties. It encompasses multiple
disciplines to ensure functionality of the built environment by integrating people, systems, place, process, and technology. Strategies. (Merriam Webster Dictionary) defines strategies as a careful plan or method. In this study, it is a plan of action or policy designed to achieve a major or overall aim. Pricing. (Merriam Webster Dictionary) defines pricing as the quantity of one thing that is exchanged or demanded in barter or sale for another or the amount of money given or set as consideration for the sale of a specified thing. In this study, it refers to the manual or automatic process of applying prices to purchase and sales orders, based on factors such as: a fixed amount, quantity break, promotion or sales campaign, specific vendor quote, price prevailing on entry, shipment or invoice date, combination of multiple orders or lines, and many others. Status. (Merriam Webster Dictionary) defines as position or rank in relation to others. In this study, it refers to the relative position or standing of a person or practices.
